Ballingarry, Co Limerick
This hospitable country house is close to Shannon Airport and there can hardly be a better place to finish a trip to Ireland than with a night spent here.
It is a lovely Victorian House, surrounded by gardens which are a pleasure to walk in and where much of the produce used in the acclaimed Mustard Seed Restaurant at the house is grown.
The house is decorated in a comfortable and elegant style, with antiques, books, paintings, drawings and an eclectic collection of interesting objects scattered around, just as they would be in a private home, and it is a very homely and welcoming place.
The bedrooms vary in size, but all are individually decorated and very well and comfortably furnished with private bathrooms. Those in the original house are smaller than some of the newer ones, but somehow nicer.
The owner, Dan Mullane, is a born host, friendly and helpful and treating each visitor more like a friend than a paying guest. Many indeed become friends, returning again and again to relax and recharge at this restful place.
The restaurant is, deservedly, extremely popular, so when booking accommodation be sure to make a reservation for dinner at the same time. Using ingredients sourced from local suppliers, mostly organic producers, or home grown outside the door, the food is beautifully cooked in a deceptively simple style.
Every time I have eaten here - many over the years - it has been pure delight, great food, wonderful atmosphere and lovely people, what more could you want? It is generally recognised as being in the top 10 Irish restaurants - I would put it very close to the top.
Stay here if you can - it will become one of your favourite places as well as one of mine, and that's a promise!

Yes, I stayed and dined at Echo Lodge during my first of three trips to
Ireland. It was a superb experience overall but I'd be remiss not to
emphasize the unique and luscious dining experience at the Mustard Seed
Restaurant. The food was so scrumptious that my friend and I could hardly
talk about anything other than the rich culinary delights we experienced.
Each trip to Ireland has brought me to a different region and I've had the
pleasure to eat in many fine places there. However, The Mustard Seed is way
at top of the list. I WILL return there during my next visit!
